Taste of Scan’s Perfect Autumn Side Dish: Pumpkin Salad with Kale, Cherry Tomatoes and Beluga Lentils

Compliment your super-easy-to-prepare flower-fed pork from Scan with this tasty Nordic salad! Kids are back in school, summer is drawing to an end and so we now look into our recipe book for our best autumn inspired recipes. Scan’s pork can be cooked any way you like- since it’s loaded with high-quality fat, the meat is quick to prepare and stays juicy and
tender. Cooking time is less critical as well, making our premium pork very easy to prepare. Now the perfect side dish is a bit more complicated! A nordic favorite, we think you’ll enjoy this innovative Pumpkin Salad with Kale, Cherry Tomatoes and Beluga Lentils.

Hokkaido pumpkin has a variety of uses in the kitchen and is rich in vitamins and minerals. Remove the seeds and fibres before cooking your Hokkaido pumpkin. We did peel it for this recipe, but the peel is edible and softens greatly during cooking. You will definitely appreciate delicate, sweet, slightly nutty flavour of the Hokkaido pumpkin, but be careful not
not overcook it.

Our Pumpkin Salad with Kale, Cherry Tomatoes and Beluga Lentils serves 6, generously portioned alongside the delectable premium pork from Taste of Scan – always tender, juicy pork.

Ingredients:
● 1 cup black beluga lentils
● 3 cups uncooked Hokkaido pumpkin in 5cm chunks
● 4-5 thyme sprigs
● salt
● 1½ cup cherry tomatoes, cut in half
● 5-7 radishes sliced
● 1 red onion, finely chopped
● 2 cups kale, chopped
● ½ lemon, juiced
● 3 tablespoons soy sauce

Instructions:
Bring 3 cups of water to boil in a medium saucepan, then add your lentils and reduce heat. Let cook for 20 mins. Meanwhile, place your Hokkaido pumpkin onto a baking sheet and season with thyme and salt. Place the baking tray in a cold oven and roast for 20 minutes at 200 Celsius / 400 Fahrenheit. Add your cherry tomatoes, kale, lemon and soy sauce to a large
bowl. Allow your lentils and pumpkin cool before transferring to the salad. Toss and serve immediately.
